10 oz (280 g) pasta of your choice (fettuccine, linguine or penne work great)

3 tablespoons olive oil

5 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

1 cup grated Parmesan cheese (or nutritional yeast for dairy-free)

Salt and pepper to taste

½ teaspoon red pepper flakes (optional)

Fresh basil or parsley for garnish

Zest of 1 lemon (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent (about 3-4 minutes). Be careful not to burn the garlic.

    Cook Pasta: Add the pasta to the pot, followed by the vegetable broth. Stir well to combine, making sure the pasta is submerged in the broth. Bring to a gentle boil.

      Simmer: Reduce the heat to medium-low and cover the pot. Let it simmer for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
