Ingredients

2 cups elbow macaroni

4 cups vegetable broth (or chicken broth)

1 cup whole milk

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup cream cheese, cubed

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional: fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, combine the elbow macaroni and vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

Add Creaminess: Lower the heat and add the milk, butter, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until the ingredients are well combined.

Cheese it Up: Gradually mix in the sharp cheddar cheese, mozzarella cheese, and cream cheese. Stir continuously until all the cheeses are melted and the mixture is creamy. If the sauce is too thick, add a little more milk to reach your desired consistency.

Taste and Adjust: Give the mac and cheese a taste, adjusting seasoning with more salt, pepper, or spices as needed.

Garnish and Serve: Remove from heat and sprinkle with fresh parsley if desired. Serve hot and enjoy your creamy one-pot mac and cheese!
