One Pot Queso Chicken and Rice

1 lb (450g) chicken breast, diced

1 cup long-grain white rice, rinsed

1 cup chicken broth

1 cup queso cheese sauce (store-bought or homemade)

1 (15 oz / 425g) can black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 small onion, diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Prepare the Ingredients: Start by chopping the chicken breast into bite-sized pieces, dicing the onion, and mincing the garlic. Rinse the rice under cold water until the water runs clear.

    Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, cumin, chili powder, and paprika. Cook until the chicken is browned and cooked through, approximately 5-7 minutes. Remove the chicken and set aside.

      Cook the Aromatics: In the same pot, add the diced onion and sauté for about 3 minutes until it’s translucent. Add the minced garlic and cook for another 30 seconds until fragrant.

        Combine Ingredients: Return the chicken to the pot. Add the rinsed rice, chicken broth, black beans, corn, and queso cheese sauce. Stir to combine all the ingredients thoroughly.

          Simmer: Bring the mixture to a simmer over medium heat. Once it reaches a simmer, reduce the heat to low, cover the pot, and let it cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.

            Fluff and Serve: Once cooked, remove the pot from heat. Let it sit, covered, for an additional 5 minutes to allow the flavors to meld. After resting, fluff the rice with a fork and garnish with chopped cilantro and sliced jalapeños if desired.
