One-Pot Spicy Black Bean and Rice Bowl

1 cup long-grain white rice

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers (any color), diced

1 can (14.5 oz) diced tomatoes with green chilies

2 cups vegetable broth

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup corn (frozen or fresh)

Juice of 1 lime

Fresh cilantro, for garnish

Avocado, sliced, for serving

Sour cream or yogurt, for serving (optional)

Instructions
 

Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers, cooking until the onion becomes translucent, about 5 minutes. Stir in minced garlic and sauté for an additional minute until fragrant.

    Add Spices: Stir in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another minute to release the flavors of the spices.

      Incorporate Base Ingredients: Add the rinsed rice to the pot, stirring well to coat it with the spices and oil. Pour in the diced tomatoes with their juices and vegetable broth. Mix well to combine all ingredients.

        Cook: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked through and has absorbed most of the liquid.

          Stir in Beans and Corn: Add the black beans and corn, folding them into the rice mixture gently. Cover again for an additional 5 minutes to heat through.

            Finishing Touches: Remove from heat. Squeeze in the lime juice and stir to combine. Taste for seasoning and adjust as necessary.

              Serve: Spoon the spicy black bean and rice mixture into bowls. Top with sliced avocado, a dollop of sour cream or yogurt if desired, and garnish with fresh cilantro.
