1 lb (450g) boneless, skinless chicken thighs

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon paprika

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

½ cup (50g) grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz (225g) pasta of choice (optional)

Prepare the Chicken: Season the chicken thighs with salt, pepper, paprika, and half of the thyme.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. When hot, add the chicken thighs and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5-6 minutes until the mushrooms have released their moisture and started to brown.

        Create the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to release any flavorful bits. Stir in the heavy cream, remaining thyme, and Parmesan cheese. Allow the mixture to simmer for about 5 minutes until slightly thickened.

          Combine Everything: Return the chicken thighs to the skillet, spooning some sauce over them. If using pasta, stir it in at this stage and let it absorb some of the creamy goodness. Let everything simmer together for another 3-4 minutes.

            Final Touches: Taste the sauce and adjust seasoning with more salt and pepper if necessary. Garnish with fresh parsley before serving.
