1 lb potato gnocchi

2 tbsp olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

½ tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the top. Drain and set aside.
