8 oz cream cheese, softened

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for a smoother melt)

Additional crushed Oreo cookies (for rolling)

Sea salt or edible glitter (for garnish, optional)

Instructions
 

Prepare the Mixture: In a medium mixing bowl, combine the crushed Oreo cookies and softened cream cheese. Mix with a spatula or your hands until the mixture is well combined and forms a dough-like consistency.

    Form the Truffles: Using a small cookie scoop or your hands, portion the mixture into balls, about 1-inch in diameter. Place the formed truffles on a baking sheet lined with parchment paper.

      Chill the Truffles: Place the tray of truffles in the refrigerator for about 30 minutes or until they are firm.

        Melt the Chocolate: While the truffles are chilling, melt the semi-sweet chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring in between, or use a double boiler for a smoother melt. If desired, stir in 1 tablespoon of coconut oil to thin the chocolate.

          Coat the Truffles: Remove the chilled truffles from the refrigerator. Dip each truffle into the melted chocolate, allowing any excess chocolate to drip off.
