3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon chili powder

Juice of 1 lime

For the Avocado Cream:

1 ripe avocado

½ cup Greek yogurt (or plant-based yogurt for a vegan option)

Juice of 1 lime

1 clove garlic, minced

Salt to taste

Fresh cilantro, for garnishing

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup diced tomatoes

¼ cup chopped red onion

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper until evenly coated. Spread the florets in a single layer on a baking sheet lined with parchment paper.

      Roast the Cauliflower: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the cauliflower is golden brown and tender, tossing halfway through. Before removing from the oven, drizzle the lime juice over the roasted cauliflower.

        Make the Avocado Cream: In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning if necessary.

          Warm the Tortillas: While the cauliflower is roasting, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are pliable and warm.
