Peach & Basil Chicken Foil Packs

Ingredients
  

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup cherry tomatoes, halved

1 red onion, thinly sliced

3 cloves garlic, minced

1/2 cup fresh basil leaves, roughly chopped

1/4 cup balsamic vinegar

2 tablespoons olive oil

Salt and pepper, to taste

4 pieces of aluminum foil, about 12x12 inches

Instructions
 

Preheat Oven or Grill: Preheat your oven to 400°F (200°C) or prepare your grill for medium heat.

    Prepare Marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper.

      Layer Ingredients: Lay out the aluminum foil pieces on a flat surface. Place a chicken breast in the center of each foil piece.

        Add Toppings: Top each chicken breast with the sliced peaches, cherry tomatoes, and red onion slices. Sprinkle the chopped basil over everything.

          Drizzle Marinade: Spoon the prepared marinade evenly over the chicken and vegetable mixture on each foil pack.

            Seal the Packs: Bring the sides of the foil together and fold down to securely seal each packet, making sure it's tightly closed to prevent any juices from escaping.

              Cook: Place the foil packs on a baking sheet or directly on the grill. If baking, cook for about 25-30 minutes; if grilling, cook for 15-20 minutes, or until the chicken is fully cooked and juices run clear.

                Serve: Carefully open the foil packs (watch out for steam!), and serve the peach & basil chicken with a side of rice or fresh salad.
