Ingredients

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of choice)

1 ripe peach, diced (plus extra for topping)

1/2 teaspoon cinnamon

1 tablespoon maple syrup (or honey)

1/4 teaspoon vanilla extract

1/4 cup Greek yogurt (optional for creaminess)

1 tablespoon chia seeds (optional for added nutrition)

Pinch of salt

Crumbled granola (for topping)

Instructions

In a mixing bowl, combine rolled oats, almond milk, diced peach, cinnamon, maple syrup, vanilla extract, Greek yogurt, chia seeds, and a pinch of salt. Stir until all ingredients are evenly mixed.

Transfer the mixture into a mason jar or airtight container. Seal the container tightly.

Place the container in the refrigerator and let it sit overnight (or at least for 4 hours) to allow the oats to absorb the liquid and soften.

In the morning, give the oats a good stir. If the mixture is too thick, feel free to add a splash more almond milk to achieve your desired consistency.

Top with additional diced peach and a sprinkle of crumbled granola for crunch before serving. Enjoy your delicious peach cobbler overnight oats!
