4 ripe fresh peaches, sliced

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1 pre-made pie crust or puff pastry

1 tablespoon butter, melted (for brushing)

Optional: Ice cream or whipped cream for serving

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare the Peaches: In a large bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss well until the peaches are evenly coated.

      Assemble the Cobbler: On a baking dish, roll out the pre-made pie crust or puff pastry to fit the bottom and sides. Pour the peach mixture into the crust, spreading it evenly.

        Create a Topping: If using puff pastry, you can cut it into strips and create a lattice pattern over the peaches or simply leave it flat.
