Peach Glazed Chicken Thighs

4 large chicken thighs, bone-in and skin-on

1 cup fresh peaches, diced (about 2 medium ripe peaches)

1/4 cup honey

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon black pepper

Salt to taste

Fresh thyme or parsley for garnish (optional)

Prepare the Peach Glaze: In a medium saucepan, combine diced peaches, honey, soy sauce, Dijon mustard, apple cider vinegar, garlic powder, ginger powder, and black pepper. Cook over medium heat, stirring gently until the mixture begins to bubble. Reduce heat to low and let simmer for about 10-15 minutes, or until the peaches soften and the glaze thickens. Remove from heat and set aside.

    Prepare the Chicken Thighs: Pat the chicken thighs dry with paper towels to ensure the skin crisps up nicely. Season both sides of the thighs with salt and pepper.

      Sear the Chicken: In a large skillet or frying pan, heat 1 tablespoon of oil over medium-high heat. Once hot, place the chicken thighs skin-side down in the pan.
