At the heart of the Sizzling Peach Delight Stir Fry are the ripe peaches, which lend their natural sweetness to the dish. Choosing freestone peaches is crucial, as their flesh easily separates from the pit, allowing for smooth slicing and effortless incorporation into the stir fry. These juicy fruits not only provide a burst of flavor but also come packed with essential vitamins and antioxidants. Peaches are a good source of vitamin C, which supports the immune system, and they contain dietary fiber that aids digestion. Their vibrant orange hue indicates the presence of beta-carotene, contributing to healthy skin and vision.

Ingredients

2 ripe peaches, sliced (preferably freestone)

1 cup bell peppers (mixed colors), thinly sliced

1 medium zucchini, julienned

1 cup snap peas, trimmed

1 small red onion, thinly sliced

2 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

½ teaspoon crushed red pepper flakes (optional for heat)

2 tablespoons fresh basil, chopped (plus extra for garnish)

Cooked quinoa or rice, for serving

Sesame seeds, for garnish

Instructions

Prep the Ingredients: Start by washing and slicing all the vegetables and peaches. This will ensure a smooth cooking process.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the sliced red onion and sauté for about 2 minutes until it starts to soften.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

Sauté Veggies: Add the bell peppers, zucchini, and snap peas to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.

Incorporate Peaches: Gently fold in the sliced peaches and continue to cook for another 2-3 minutes. The peaches should begin to soften slightly and release their juices.

Season: Pour in the soy sauce and sesame oil, adding the crushed red pepper flakes if using. Toss everything together to ensure the vegetables and peaches are evenly coated in the sauce.

Finalize and Serve: Remove from heat and stir in the fresh basil. Serve hot over a bed of quinoa or rice. Garnish with sesame seeds and additional basil on top for a fresh touch.
