Peanut Butter and Jelly Bars

1 ½ cups old-fashioned rolled oats

1 cup all-purpose flour

½ cup brown sugar, packed

½ teaspoon baking soda

¼ teaspoon salt

½ cup creamy peanut butter

½ cup unsalted butter, melted

½ cup honey or maple syrup

1 teaspoon vanilla extract

¾ cup raspberry or strawberry jam (or your favorite fruit jam)

Optional: ¼ cup chopped nuts (e.g., peanuts or walnuts) for crunch

Optional: ¼ cup mini chocolate chips for a twist

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Mix until well combined.

      Mix Wet Ingredients: In another bowl, combine the melted butter, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and fully incorporated.

        Combine Wet & Dry Mixes: Pour the wet mixture over the dry ingredients and mix until all the dry ingredients are moistened and fully blended. If you’re adding nuts or chocolate chips, fold them in at this stage.

          Layer the Mixture: Press half of the oat mixture into the bottom of the prepared baking pan to form the crust. Make sure to spread it evenly.

            Spread the Jam: Spoon the raspberry or strawberry jam over the pressed oat crust. Use a spatula to spread it evenly, leaving a small border around the edges.

              Top with Remaining Mixture: Crumble the remaining oat mixture over the jam layer. Try to cover as much of the jam as possible but don’t worry if some jam peeks through.

                Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges start to pull away from the sides of the pan.

                  Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10-15 minutes. Then, lift out the bars using the parchment paper (if you used it) and transfer to a wire rack to cool completely before cutting into squares.

                    Serve and Enjoy: Once cooled, cut the bars into squares or rectangles. Store in an airtight container for up to a week or freeze for longer storage.
