Peanut Butter Apple Energy Bars

Ingredients
  

1 cup rolled oats

1/2 cup natural peanut butter (creamy or crunchy)

1/4 cup honey or maple syrup

1 small apple, finely diced (about 1 cup)

1/2 cup dried cranberries or cherries

1/4 cup chopped nuts (walnuts, almonds, or your choice)

1/4 cup ground flaxseed or chia seeds

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup mini chocolate chips or coconut flakes for added flavor

Instructions
 

Prepare Your Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later. This will help the bars hold their shape.

    Mix the Dry Ingredients: In a large bowl, combine the rolled oats, ground flaxseed (or chia seeds), cinnamon, salt, dried cranberries, and chopped nuts. Mix them well to ensure the ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, mix the natural peanut butter and honey (or maple syrup) until smooth. If the peanut butter is too thick, microwave it for about 15-20 seconds to make it more pourable.

        Add the Apple: Fold the finely diced apple into the wet mixture, ensuring the apple pieces are well-coated with peanut butter and honey.

          Combine All Ingredients: Pour the wet mixture into the bowl of dry ingredients. Stir everything together until all the oats and mix-ins are fully coated. If you’re adding chocolate chips or coconut flakes, fold them in now.

            Press into the Pan: Transfer the mixture to the prepared baking dish. Using your hands or a spatula, firmly press the mixture down evenly into the pan. The more compact the mixture, the better the bars will hold together.

              Chill: Place the baking dish in the refrigerator for at least 2 hours or until set. This chilling time allows the bars to firm up and makes them easier to cut.

                Slice and Store: Once chilled, remove the bars from the pan using the parchment overhang. Place on a cutting board and slice them into bars or squares as desired. Store in an airtight container in the fridge for up to a week, or individually wrap them for on-the-go snacks.
