Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Peanut Butter Cheesecake Swirl:

8 oz cream cheese, softened

1/2 cup creamy peanut butter

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal.

Make the Brownie Layer: In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar. Allow it to cool slightly before adding the eggs and vanilla extract. Mix until well combined.

Add Dry Ingredients: In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually combine the dry ingredients with the wet mixture until just blended. Do not overmix.

Prepare the Peanut Butter Cheesecake Swirl: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the creamy peanut butter, granulated sugar, egg, vanilla extract, and a pinch of salt. Mix until creamy and well-combined.

Layer the Brownies: Pour the brownie batter into the prepared baking pan, spreading it evenly. Spoon dollops of the peanut butter cheesecake mixture over the brownie layer.

Swirl Together: Use a knife or a toothpick to gently swirl the cheesecake mixture into the brownie batter, creating a marbled effect. Be careful not to fully combine the two layers.

Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).

Cool and Serve: Allow the brownies to cool in the pan for at least 15 minutes. Then lift them out using the parchment paper sling, transfer to a wire rack to cool completely. Cut into squares and serve, optionally drizzling additional melted peanut butter on top.
