Peanut Butter Pretzel Chocolate Chip Cookies

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips (semi-sweet or dark)

1 cup mini pretzels, crushed (plus additional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Cream Butter and Sugars: In a large mixing bowl, beat together the creamy peanut butter and softened unsalted butter using a hand mixer or stand mixer, until the mixture is smooth and creamy.

      Add Sugars and Egg: Add the brown sugar and granulated sugar to the butter mixture. Beat until well combined. Then, add in the egg and vanilla extract, mixing until incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.

          Fold in Chocolate Chips and Pretzels: Gently fold in the chocolate chips and crushed pretzels until evenly distributed throughout the dough.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie to allow for spreading.
