2-4 tablespoons warm water (to thin the sauce)

For the Noodle Bowl:

8 ounces rice noodles (or your favorite noodles)

1 cup carrots, julienned

1 cup bell peppers, thinly sliced (mix of colors for presentation)

1 cup cucumber, thinly sliced

1 cup snap peas or snow peas

1/2 cup red cabbage, shredded

1 avocado, sliced

1/4 cup scallions, thinly sliced

Sesame seeds, for garnish

Fresh cilantro, for garnish

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, and sriracha.
