Pear & Hazelnut Biscotti

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup dried pears, finely chopped

½ cup hazelnuts, toasted and coarsely chopped

½ teaspoon ground cinnamon (optional)

Zest of 1 lemon (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Prep the Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon (if using). Set aside.

      Cream the Butter & Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.

        Add Eggs & Flavorings: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest (if using).

          Combine Ingredients: Gradually add the flour mixture into the wet ingredients, mixing until just combined. Fold in the chopped dried pears and toasted hazelnuts.

            Form the Dough: The dough will be sticky; divide it into two equal portions and shape each into a log about 2 inches wide and 12 inches long on the prepared baking sheet.

              First Bake: Bake in the preheated oven for 25-30 minutes, or until the logs are lightly browned.

                Cool & Slice: Remove from the oven and allow to cool for about 15 minutes. Using a serrated knife, slice the logs diagonally into ½-inch thick pieces.

                  Second Bake: Arrange the sliced biscotti, cut side up, back on the baking sheet. Bake for an additional 10-15 minutes, turning them halfway through, until they are crisp and golden.

                    Cool Completely: Remove from the oven and allow biscotti to cool completely on a wire rack.

                      Store or Serve: Enjoy immediately or store in an airtight container for up to two weeks. Biscotti are delicious on their own or served alongside coffee or tea!
