1 cup pecans, finely chopped

1 cup dates, pitted and chopped (medjool dates work best)

1/2 cup almond flour

1/4 cup maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (for rolling, optional)

Extra pecans or shredded coconut (for rolling, optional)

Instructions
 

Prepare the Ingredients: Start by finely chopping the pecans and pitting the dates if they aren't already. If you have a food processor, you can pulse the pecans until they reach a fine crumb texture; set aside.

    Combine the Base: In a large mixing bowl, combine the chopped dates, almond flour, maple syrup, vanilla extract, cinnamon, and salt. Mix well until everything is evenly combined and becomes sticky. If the mixture seems too dry, add a tiny bit more maple syrup.

      Add the Pecans: Fold in the finely chopped pecans to the mixture, ensuring they are evenly distributed throughout.

        Form the Balls: Use your hands to scoop out about a tablespoon of the mixture and roll it into a ball. Place the ball on a tray lined with parchment paper. Repeat until all the mixture is formed into balls.

          Chill the Balls: Cover the tray with plastic wrap and place it in the refrigerator for at least 30 minutes to help the balls firm up.

            Optional Coating: If you’d like, melt the dark chocolate chips using a microwave (heat in 30-second intervals, stirring in between) or on the stovetop using a double boiler. Once melted, roll each pecan pie ball in the chocolate before placing them back on the parchment paper to set. Alternatively, you can roll the balls in extra chopped pecans or shredded coconut for a different texture.
