1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk or milk

1 cup pecans, roughly chopped

1/2 cup corn syrup

1 teaspoon ground cinnamon

Optional: 1/4 cup chocolate chips (for a twist!)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

    Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In another bowl, beat the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

          Mix in Buttermilk: Pour in the buttermilk (or milk) and mix until combined. The mixture should be smooth and creamy.

            Combine Wet and Dry Ingredients: Gently fold the flour mixture into the wet ingredients, being careful not to overmix. Stir until just combined.

              Incorporate Pecans: Add the chopped pecans and corn syrup to the batter and fold them in gently. If using chocolate chips, now is the time to add them for a sweet surprise!

                Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
