1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

2 tablespoons Cajun seasoning

Salt and pepper to taste

1 avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to a simmer, cover, and cook for about 15 minutes or until the quinoa has absorbed all the liquid. Fluff with a fork and let it cool.

    Prepare the Vegetables: While the quinoa cooks, prepare the vegetables. Dice the red and yellow bell peppers, chop the red onion, halve the cherry tomatoes, and mince the jalapeño. Set aside.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Cajun seasoning, and a pinch of salt and pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooled quinoa, black beans, bell peppers, red onion, cherry tomatoes, corn, jalapeño, and cilantro.

          Dress the Salad: Pour the dressing over the quinoa mixture. Toss gently to combine all the ingredients evenly, ensuring the dressing coats everything well.
