1/4 cup pine nuts (toasted)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper, to taste

Crushed red pepper flakes (optional, for a kick)

Fresh cherry tomatoes, halved (for garnish)

Extra basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Make the Pesto: In a food processor, combine basil leaves, toasted pine nuts, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Pulse until finely chopped. With the processor running, slowly drizzle in olive oil until the pesto reaches a smooth consistency. Taste and adjust seasoning if necessary.
