1 can (20 oz) crushed pineapple, drained

1 cup sugar

1 cup shredded sharp cheddar cheese

1 cup buttery round crackers, crushed (like Ritz)

1/2 cup unsalted butter, melted

2 large eggs

1/4 cup all-purpose flour

1/2 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large mixing bowl, combine the drained crushed pineapple with sugar, shredded cheddar cheese, and melted butter. Stir well to combine.

      In a separate bowl, whisk together the eggs, flour, vanilla extract, and cinnamon (if using) until smooth.

        Fold the egg mixture into the pineapple mixture until just combined.

          Pour the mixture into the prepared baking dish, spreading it evenly.

            Sprinkle the crushed crackers evenly over the top of the casserole.

              Bake in the preheated oven for 30-35 minutes or until the casserole is bubbly and the cracker topping is golden brown.

                Remove from the oven and let it cool for about 5-10 minutes before serving for the flavors to meld together.
