1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups jasmine rice

1 can (20 oz) pineapple chunks in juice, drained (reserve juice)

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup hoisin sauce

1/4 cup chicken broth

1 tablespoon olive oil

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon red pepper flakes (optional)

4 green onions, sliced (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Prepare the Rice: Start by rinsing the jasmine rice under cold water to remove excess starch. Cook the rice according to package instructions, using chicken broth instead of water for extra flavor. Once cooked, fluff with a fork and set aside.

    Marinate the Chicken: In a mixing bowl, combine the cut chicken thighs with soy sauce, hoisin sauce, black pepper, and salt. Let it marinate for at least 15-20 minutes.

      Cook the Chicken: In a large skillet or wok, heat the olive oil over medium-high heat. Add the marinated chicken pieces and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a splash of sesame oil. Toss in the chopped onion, garlic, ginger, and diced bell peppers. Sauté for 3-4 minutes until the vegetables are tender and fragrant.

          Add Pineapple and Sauce: Stir in the pineapple chunks and any reserved pineapple juice. Bring to a gentle simmer and cook for about 2 minutes to combine flavors.
