Ingredients

2 boneless, skinless chicken breasts, diced

1 cup fresh pineapple chunks (or canned, drained)

1 cup jasmine rice (uncooked)

2 tablespoons teriyaki sauce

1 tablespoon soy sauce

1 tablespoon olive oil

1 bell pepper (red or yellow), sliced

1 cup snap peas (or green beans)

2 green onions, chopped

1 teaspoon minced garlic

1 teaspoon minced ginger

Salt and black pepper, to taste

Sesame seeds for garnish

Fresh cilantro or parsley for garnish

Instructions

Prepare the Rice: Cook jasmine rice according to package instructions. Typically, this involves rinsing the rice, cooking it with double the amount of water, and simmering for about 15-20 minutes until fluffy.

Marinate the Chicken: In a bowl, combine the diced chicken with teriyaki sauce, soy sauce, minced garlic, and ginger. Allow it to marinate for about 15-30 minutes to soak up the flavors.

Cook the Chicken: Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken to the pan. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through. Season with salt and black pepper to taste.

Add Vegetables: Once the chicken is cooked, add the sliced bell pepper and snap peas to the skillet. Stir-fry alongside the chicken for an additional 4-5 minutes, or until the vegetables are tender-crisp.

Incorporate Pineapple: Gently fold in the pineapple chunks and stir for another 2-3 minutes until warmed through.

Serve: In serving bowls, layer the cooked jasmine rice at the bottom, top it with the pineapple chicken mixture, and garnish with chopped green onions, sesame seeds, and fresh cilantro or parsley.

Enjoy: Serve hot and enjoy the delightful flavors of your Pineapple Chicken Teriyaki Bowl!
