2 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 medium jalapeño, finely chopped (seeds removed for less heat)

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon lime juice

Salt and pepper, to taste

4 large flour tortillas (or wraps of your choice)

1 cup shredded lettuce

1/2 cup shredded cheddar cheese

Fresh cilantro, for garnish (optional)

Marinate the Chicken: In a bowl, combine olive oil, soy sauce, honey, lime juice, minced garlic, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate in the refrigerator for at least 30 minutes, allowing the flavors to infuse.
