Pistachio Cranberry Energy Balls

Ingredients
  

1 cup raw pistachios, shelled

1 cup dried cranberries

1 cup rolled oats

1/2 cup nut butter (almond, peanut, or cashew)

1/4 cup honey or maple syrup

2 tablespoons chia seeds

1 teaspoon vanilla extract

A pinch of sea salt

Optional: 1/4 teaspoon ground cinnamon

Prepare the Pistachios: In a food processor, pulse the raw pistachios until they reach a coarse meal-like consistency, while retaining a few chunks for texture. Be careful not to over-process them into a paste.

    Mix Ingredients: In a large mixing bowl, combine the ground pistachios, dried cranberries, rolled oats, nut butter, honey or maple syrup, chia seeds, vanilla extract, sea salt, and ground cinnamon (if using). Stir everything together until well combined.

      Form Balls: Once the mixture is combined, use your hands to roll about 1 tablespoon of the mixture into a ball. Repeat until all the mixture is shaped into energy balls. You should yield approximately 15-20 balls depending on size.

        Chill: Place the energy balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.

          Store: Once set, transfer the energy balls into an airtight container. They can be stored in the refrigerator for up to a week or in the freezer for up to a month for longer-lasting snacks.
