Pork Chops and Potatoes Casserole

4 bone-in pork chops (about 1-inch thick)

1 lb baby Yukon Gold potatoes, halved

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tbsp olive oil

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Season Pork Chops: Rub the pork chops with olive oil, then season both sides generously with salt, pepper, paprika, and thyme.

      Sear the Pork Chops: In a large skillet over medium-high heat, sear the pork chops for about 4-5 minutes on each side until they're golden brown. Remove and set aside.

        Prepare the Potatoes and Onions: In the same skillet, add sliced onions and cook over medium heat for about 3-4 minutes until soft. Add minced garlic and cook for another minute until fragrant.

          Combine Ingredients: In a large bowl, mix the halved Yukon Gold potatoes with the sautéed onions and garlic. Pour in the heavy cream and chicken broth, then stir to combine.

            Assemble Casserole: In a greased 9x13-inch baking dish, spread the potato mixture evenly on the bottom. Place the seared pork chops on top, ensuring they’re nestled into the potatoes.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil, sprinkle shredded cheddar cheese on top, and return to the oven uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden.
