Ingredients

1 lb (450g) boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas (or wraps of your choice)

1 cup shredded coleslaw mix (pre-packaged or homemade)

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Chicken:

    - In a mixing bowl, combine smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mix into the chicken thighs evenly.

      Sear the Chicken:

        - Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and sear for approximately 3-4 minutes per side until golden brown.

          Cook the Chicken:

            - Once seared, reduce the heat to low. Pour BBQ sauce over the chicken, cover, and simmer for 20-25 minutes, until the chicken is cooked through and tender. The internal temperature should read 165°F (75°C).

              Shred the Chicken:

                - Remove the chicken from the skillet and let it cool slightly. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the skillet and mix it with the remaining BBQ sauce.

                  Assemble the Wraps:

                    - On each tortilla, distribute the pulled BBQ chicken evenly. Top with a generous handful of coleslaw mix and a few slices of avocado.

                      Wrap Up:

                        - Roll the tortilla tightly, folding in the sides as you go to secure the filling. Slice each wrap in half if desired.

                          Serve:

                            - Serve the wraps garnished with fresh cilantro and lime wedges on the side for an added burst of flavor.
