1 cup ripe bananas, mashed (about 2-3 bananas)

1 cup canned pumpkin puree

1/3 cup coconut oil, melted (or vegetable oil)

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, melted coconut oil, brown sugar, honey or maple syrup, eggs, and vanilla extract. Mix until well combined and smooth.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly mixed.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; it's fine if there are a few lumps.

          Add Extras: If you’re using nuts or chocolate chips, fold them into the batter now.

            Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. They can be enjoyed warm or at room temperature.
