Pumpkin Cream Cheese Muffins

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon ground cloves

½ cup granulated sugar

½ cup packed brown sugar

2 large eggs

1 cup pumpkin puree (canned or fresh)

½ cup vegetable oil

1 teaspoon vanilla extract

6 oz cream cheese, softened

2 tablespoons powdered sugar

1 tablespoon lemon juice

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.

    Prepare the Cream Cheese Filling: In a small bowl, combine the softened cream cheese, powdered sugar, and lemon juice. Mix until smooth and set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Set aside.

        Combine Wet Ingredients: In another bowl, beat the granulated sugar, brown sugar, and eggs until light and fluffy. Add in the pumpkin puree, vegetable oil, and vanilla extract, mixing until combined.

          Combine Both Mixtures: Slowly add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix; a few lumps are perfectly fine.

            Fill Muffin Tins: Spoon about two-thirds of the muffin batter into each muffin cup. Then, add a dollop of the cream cheese filling in the center of each muffin. Cover the cream cheese filling with the remaining batter, filling each cup about three-quarters full.

              Bake: Place in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
