1 cup pumpkin puree (fresh or canned)

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1 cup graham cracker crumbs

1 cup white chocolate chips

1 tablespoon coconut oil (or vegetable oil)

Additional pumpkin pie spice or cinnamon for dusting (optional)

Instructions
 

Mix the Base: In a mixing bowl, combine the pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin pie spice. Use an electric mixer on medium speed until the mixture is smooth and well combined.

    Add Texture: Gradually fold in the graham cracker crumbs until fully incorporated. The mixture should be thick enough to hold its shape but still soft.

      Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 30 minutes to an hour, or until the mixture is firm enough to scoop and roll into balls.

        Shape the Truffles: Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls. Place them on a parchment-lined baking sheet.

          Prepare the Coating: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.

            Coat the Truffles: Dip each pumpkin truffle into the melted white chocolate, using a fork to ensure they are completely coated. Allow the excess chocolate to drip off.

              Set the Coating: Place the chocolate-coated truffles back on the parchment-lined baking sheet. While the chocolate is still wet, lightly dust with additional pumpkin pie spice or cinnamon if desired.

                Chill Again: Refrigerate the truffles for about 30 minutes to set the chocolate coating completely.
