Ingredients

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup milk

2 large eggs

1/4 cup brown sugar

1 teaspoon vanilla extract

1/4 cup melted butter or coconut oil

For the Yogurt Dip:

1 cup plain Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

A pinch of cinnamon (optional)

Instructions

Preheat Waffle Iron: Start by preheating your waffle iron according to the manufacturer’s instructions.

Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, whole wheat flour, baking powder, cinnamon, ginger, nutmeg, and salt. This will ensure even distribution of the leavening agents and spices.

Combine Wet Ingredients: In another bowl, whisk together the canned pumpkin, milk, eggs, brown sugar, vanilla extract, and melted butter (or coconut oil) until well combined and smooth.

Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Cook the Waffle Sticks: Lightly grease the waffle iron with non-stick spray or a little oil. Pour an appropriate amount of batter (about 3/4 cup, depending on your waffle iron size) onto the waffle iron, close it, and cook according to your iron’s instructions until the waffles are golden brown and cooked through (about 5-7 minutes).

Cut into Sticks: Once cooked, carefully remove the waffles from the iron and let them cool slightly. Using a sharp knife or pizza cutter, cut the waffles into long strips or sticks.

Prepare the Yogurt Dip: In a small bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon (if using). Stir well until smooth. Taste and adjust sweetness as desired.

Serve: Arrange the pumpkin waffle sticks on a plate and serve warm alongside the yogurt dip. You can drizzle some extra honey on top for added sweetness and garnish with a sprinkle of cinnamon.
