Quick and Zesty Black Bean Tacos

1 can (15 oz) black beans, rinsed and drained

1 medium red onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder (adjust for spice preference)

1 lime, juiced

Salt and pepper to taste

8 small corn or flour tortillas

1 cup fresh cilantro, chopped

1 avocado, sliced

1 cup shredded lettuce

½ cup crumbled feta cheese (optional)

Salsa or hot sauce, for serving

Instructions
 

Sauté the Vegetables: In a medium skillet over medium heat, add a splash of olive oil. Once hot, add the chopped red onion and red bell pepper. Sauté for about 3-4 minutes until softened.

    Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 1-2 minutes until the garlic is fragrant.

      Incorporate Black Beans: Add the rinsed black beans to the skillet. Mix well and let everything cook together for another 3-5 minutes. Drizzle with fresh lime juice and stir to combine.

        Warm the Tortillas: While the black bean mixture is heating, warm the tortillas in a separate skillet, or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 5 minutes.

          Assemble the Tacos: Once the tortillas are warm, fill each one with a generous scoop of the black bean mixture. Top with shredded lettuce, avocado slices, chopped cilantro, and crumbled feta cheese if using.

            Serve: Drizzle with salsa or hot sauce and enjoy your quick and zesty tacos!
