1 lb (450g) lean beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

3 green onions, chopped (white and green parts separated)

2 tablespoons sesame seeds (optional)

Cooked jasmine or brown rice, for serving

Instructions
 

Marinade the Beef: In a medium bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for about 15 minutes while you prep the vegetables.

    Prep the Veggies: While the beef is marinating, slice the bell pepper, julienne the carrot, and chop the broccoli into bite-sized pieces. Mince the garlic and ginger, and chop the green onions, keeping the white and green parts separate.

      Heat the Oil: In a large, non-stick skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Stir-Fry the Beef: Once the oil is hot, add the marinated beef to the skillet in a single layer (you may need to do this in batches). Stir-fry for about 2-3 minutes until browned but not fully cooked through. Remove the beef from the skillet and set aside.

          Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the white parts of the green onions, garlic, and ginger, sautéing for about 30 seconds until fragrant. Then, add the sliced bell pepper, broccoli florets, and julienned carrot. Stir-fry for approximately 3-4 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the beef to the skillet and toss everything together. Cook for another 2-3 minutes until the beef is cooked through, and everything is heated evenly.

              Finish and Serve: Once ready, sprinkle with sesame seeds and toss again. Serve hot over cooked jasmine or brown rice, garnished with the green parts of the green onions.
