Quick & Cheesy Broccoli Quinoa Bake

1 cup quinoa, rinsed and drained

2 cups vegetable broth (or water)

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cottage cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup chopped green onions (optional, for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish or a similar size casserole dish.

    Cook the quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

      Prepare the broccoli: While the quinoa is cooking, steam the broccoli florets for 3-4 minutes until bright green and tender-crisp. If using frozen broccoli, thaw and drain well.

        Mix the cheesy filling: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, shredded cheddar cheese, cottage cheese, grated Parmesan cheese, eggs, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.

          Assemble the bake: Transfer the mixture into the greased baking dish and spread it out evenly. Sprinkle additional cheddar cheese on top for an extra cheesy crust.

            Bake it: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the center is set.

              Garnish and serve: Once baked, let it cool for a few minutes. Garnish with chopped green onions if desired. Serve warm and enjoy this delightful cheesy bake!
