12 oz (340g) large rigatoni or penne pasta

1 lb (450g) ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned, drained)

1 cup cream cheese, softened

2 cups shredded cheddar cheese (divided)

1 cup salsa

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Olive oil for sautéing

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the rigatoni/penne according to package instructions until al dente. Drain and set aside.

    Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.

      Cook the Meat: Add the ground beef (or turkey) to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if needed.
