Quick Chicken and Broccoli Stir-Fry in 30 Minutes

1 pound boneless, skinless chicken breasts, thinly sliced

3 cups broccoli florets, fresh or frozen

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 teaspoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or quinoa, for serving

Optional: 2 green onions sliced, for garnish

Prep the Ingredients: Start by slicing the chicken breasts into thin strips, wash and prepare the broccoli, and mince the garlic and ginger.

    Marinate the Chicken: In a small bowl, combine the sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Let it marinate while you prepare the other ingredients, about 5 minutes.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Cook the Chicken: Add the marinated chicken slices to the pan in a single layer. Cook for about 3-4 minutes or until the chicken is browned and cooked through. Stir frequently for even cooking. Remove the chicken from the pan and set aside.

          Stir-Fry the Veggies: In the same pan, add a bit more oil if necessary. Toss in the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Add the broccoli florets and stir-fry for about 3-4 minutes, until they are bright green and tender-crisp.

            Combine and Sauce it Up: Return the cooked chicken to the pan with the broccoli. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, and the cornstarch slurry. Stir well to combine, cooking for an additional 2 minutes until the sauce has thickened slightly.

                Serve: Remove from heat and serve immediately over cooked jasmine rice or quinoa. Garnish with sliced green onions if desired.
