Quick Chicken and Vegetable Stir-Fry Wraps

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 cups mixed vegetables (bell peppers, broccoli, and snap peas)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 teaspoon garlic, minced

1 teaspoon ginger, grated

1 tablespoon corn starch

1 tablespoon water

Salt and pepper, to taste

4 large whole wheat tortillas

1/2 cup cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: In a bowl, combine the sliced chicken breast with soy sauce, oyster sauce, garlic, ginger, salt, and pepper. Allow it to marinate for about 10 minutes for enhanced flavor.

    Stir-Fry the Chicken: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add a little more sesame oil if needed, then toss in the mixed vegetables. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

        Combine Everything: Return the chicken to the skillet with the vegetables. Mix corn starch with water in a small bowl to make a slurry, then add it to the skillet. Stir well until everything is coated and the sauce thickens slightly, about 1-2 minutes.

          Assemble the Wraps: On each tortilla, arrange an equal amount of the chicken and vegetable mixture in the center. Top with chopped cilantro. Roll the tortillas tightly, folding in the sides as you go to secure filling.

            Serve: Cut the wraps in half diagonally and serve with lime wedges on the side for squeezing over the top.
