Ingredients

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

Salt and pepper, to taste

6 cups chicken broth

2 cups cooked chicken, shredded (rotisserie chicken works great)

2 cups egg noodles

1 cup fresh spinach (optional)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic, carrots, and celery, and cook for another 4-5 minutes until the vegetables begin to soften.

Season: Sprinkle in the dried thyme, dried rosemary, salt, and pepper. Stir well to combine and let the spices cook for about 1 minute, enhancing their flavor.

Add Broth and Chicken: Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and add the shredded chicken. Let it simmer for about 5 minutes to allow the flavors to meld.

Cook the Noodles: Add the egg noodles to the pot and continue to simmer for an additional 8-10 minutes, or until the noodles are tender.

Incorporate Spinach: If using, add the fresh spinach just a couple of minutes before serving, allowing it to wilt without losing its vibrant color.

Taste and Adjust: Taste the soup and adjust the seasoning with more salt and pepper if needed.

Serve: Ladle the soup into bowls and garnish with fresh chopped parsley.
