Sourdough is one of the oldest forms of leavened bread, dating back thousands of years. Unlike bread made with commercial yeast, sourdough relies on wild yeast and lactic acid bacteria present in the environment and in the sourdough starter itself. This natural fermentation process gives sourdough its characteristic tangy flavor and unique texture. The use of sourdough in pizza dough not only enhances the flavor but also contributes to a more complex and satisfying culinary experience.

Ingredients

1 cup active sourdough starter (room temperature)

1/2 cup warm water (about 100°F / 38°C)

2 cups all-purpose flour (plus extra for dusting)

1 teaspoon salt

1 tablespoon olive oil

1 teaspoon honey or sugar (optional, for a touch of sweetness)

Instructions

Mix Ingredients: In a large mixing bowl, combine the active sourdough starter and warm water. Stir until well blended.

Incorporate Dry Ingredients: Gradually add the flour and salt to the starter mixture. If using honey or sugar, add it now. Mix with a spoon until the dough starts to come together.

Knead the Dough: Transfer the dough onto a lightly floured surface and knead for about 5-8 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

First Rise: Place the kneaded dough in a lightly oiled bowl. Cover with a kitchen towel or plastic wrap and let it rise for about 30-45 minutes in a warm place, or until it has doubled in size.

Shape the Pizza: After the dough has risen, punch it down gently to release the air. Turn it out onto a floured surface, divide it into two equal portions, and shape each portion into a ball.

Preheat Oven: Preheat your oven to 475°F (245°C) for at least 30 minutes. If using a pizza stone, place it in the oven to heat up as well.

Roll Out Dough: Take one ball of dough and roll it out to your desired thickness (about ¼ inch for a classic pizza crust). Place it on a pizza peel or parchment paper for easy transfer to the oven.

Add Toppings: Brush the dough with olive oil, add your favorite pizza sauce, cheese, and toppings.

Bake: Carefully transfer the pizza to the preheated oven (or onto the pizza stone). Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.

Cool and Serve: Remove the pizza from the oven and let it cool for a couple of minutes before slicing. Enjoy your delicious sourdough pizza with your favorite beverages!
