Quick Teriyaki Tofu Stir-Fry with Broccoli

14 oz firm tofu, drained and pressed

2 tbsp cornstarch

2 tbsp vegetable oil

3 cups broccoli florets

1 red bell pepper, sliced

2 cloves garlic, minced

1 inch ginger, grated

1/4 cup teriyaki sauce

1 tbsp soy sauce

1 tsp sesame oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Preparing the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with cornstarch until evenly coated. This will give the tofu a nice crispy texture when cooked.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the tofu cubes in a single layer. Fry for 4-5 minutes until golden and crispy, turning occasionally for even cooking. Once done, remove the tofu from the pan and set it aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the broccoli florets and bell pepper slices. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

        Aromatics: Add the minced garlic and grated ginger to the skillet, cooking for an additional minute until fragrant.

          Combine with Sauce: Return the crispy tofu to the pan and pour in the teriyaki sauce, soy sauce, and sesame oil. Stir everything together, allowing the sauces to coat the tofu and veggies well. Cook for an additional 2-3 minutes, letting the sauce thicken slightly.

            Serve and Garnish: Remove from heat and serve hot, garnished with sliced green onions and a sprinkle of sesame seeds on top.
