Quick Teriyaki Tofu with Broccoli and Rice

1 block (14 oz) firm tofu, pressed and diced

2 cups broccoli florets

1 cup jasmine or basmati rice

1 cup low-sodium vegetable broth (or water)

1/4 cup soy sauce

2 tbsp maple syrup or honey

1 tbsp rice vinegar

1 tbsp sesame oil

1 tsp ginger, grated

2 cloves garlic, minced

1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine the rice and vegetable broth (or water). Bring to a boil, cover, and reduce heat to low. Let it simmer for about 15-20 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Tofu: While the rice cooks, heat 1 tablespoon of sesame oil in a large non-stick skillet or wok over medium heat. Add the diced tofu and cook for about 5-7 minutes or until golden brown on all sides. Remove the tofu from the skillet and set aside.

      Sauté Broccoli: In the same skillet, add the broccoli florets and a splash of water. Cover and steam for about 3-4 minutes until bright green and slightly tender. Remove the lid and add the minced garlic and grated ginger, sautéing for an additional minute.

        Make the Teriyaki Sauce: In a small bowl, whisk together the soy sauce, maple syrup (or honey), rice vinegar, and additional sesame oil. Pour this sauce into the skillet with the broccoli.

          Combine Tofu with Sauce: Return the cooked tofu to the skillet and stir to combine everything. If using, gradually add the cornstarch mixture to thicken the sauce, and cook for another 2-3 minutes until everything is hot and well-coated.

            Serve: In serving bowls, layer the jasmine rice, top with the teriyaki tofu and broccoli mixture, and garnish with sliced green onions and sesame seeds.
