1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into thin strips

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 Thai bird’s eye chilies, chopped (adjust for spice preference)

1 red bell pepper, sliced

1 medium onion, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon sugar (palm sugar is preferred)

1 cup fresh Thai basil leaves (or regular basil)

Cooked jasmine rice, for serving

Lime wedges, for garnish

Prepare the Chicken: Begin by slicing the chicken into thin strips. This ensures they cook quickly and absorb all the flavors.

    Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat until shimmering.

      Add Aromatics: Add the minced garlic and chopped bird’s eye chilies to the pan. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

        Cook the Chicken: Add the sliced chicken to the pan. Stir-fry for around 4-5 minutes or until the chicken is cooked through and lightly browned.

          Incorporate Veggies: Toss in the sliced red bell pepper and onion. Stir-fry for another 2-3 minutes until the vegetables are tender yet crisp.

            Add Sauces: In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, and sugar. Pour this sauce mixture over the cooked chicken and vegetables. Stir well to combine, ensuring everything is coated with the sauce.
