Ingredients

For the Raspberry Filling:

2 cups fresh or frozen raspberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

For the Crumble Base and Topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup almond flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup sliced almonds

1 teaspoon almond extract

Instructions

Prepare the Raspberry Filling:

    - In a saucepan over medium heat, combine the raspberries, granulated sugar, cornstarch, and lemon juice. Cook until the mixture begins to bubble and the raspberries have broken down, about 5-7 minutes. Remove from heat and set aside to cool.

      Make the Crumble Base:

        - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

          - In a large mixing bowl, whisk together the all-purpose flour, rolled oats, almond flour, brown sugar, baking powder, and salt.

            - Pour in the melted butter and almond extract, then mix until the mixture is crumbly and evenly combined.

              Assemble the Bars:

                - Reserve 1 cup of the crumble mixture for the topping. Press the remaining crumble mixture firmly into the bottom of the prepared baking pan to form an even base.

                  - Spread the raspberry filling over the crumble base, ensuring an even layer.

                    - Sprinkle the reserved crumble mixture evenly over the raspberry filling, and then top with the sliced almonds.

                      Bake:

                        - Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbling.

                          Cool and Slice:

                            - Once baked, allow the bars to cool completely in the pan on a wire rack for at least 1 hour. Use the parchment overhang to lift the bars out of the pan, then slice into squares or rectangles.

                              Serve:

                                - Enjoy these Raspberry Almond Crumble Bars warm or at room temperature, perhaps with a dollop of whipped cream or a scoop of ice cream!
