4 cups of watermelon, diced (seedless for best results)

1 cup of cucumber, diced

½ cup of red onion, thinly sliced

1 cup of cherry tomatoes, halved

½ cup of fresh mint leaves, chopped

½ cup of feta cheese, crumbled

¼ cup of fresh lime juice (about 2 limes)

2 tablespoons of olive oil

1 teaspoon of sea salt

½ teaspoon of black pepper

Optional: 1 jalapeño, finely chopped (for a spicy kick)

Instructions
 

Prepare the Ingredients: Start by washing and dicing the watermelon, cucumber, and cherry tomatoes. If you're including the jalapeño, finely chop it as well. Thinly slice the red onion and finely chop the fresh mint.

    Mix the Salad: In a large mixing bowl, combine the diced watermelon, cucumber, cherry tomatoes, red onion, and jalapeño (if using). Gently toss the ingredients together to combine them evenly.

      Make the Dressing: In a small bowl, whisk together the fresh lime juice, olive oil, sea salt, and black pepper until well blended.
