Ingredients

1 lb (450g) Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional for heat)

¼ cup balsamic vinegar

1 tablespoon honey or maple syrup

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare Brussels Sprouts: Rinse the Brussels sprouts thoroughly, trim the ends, and cut them in half. Make sure they are dry after washing to achieve maximum crispiness during roasting.

Seasoning: In a large bowl, toss the halved Brussels sprouts with olive oil, garlic powder, salt, black pepper, and red pepper flakes (if using) until well coated.

Arrange on Baking Sheet: Spread the seasoned Brussels sprouts in a single layer on a baking sheet, ensuring they are not crowded (this helps them to roast instead of steam).

Roasting: Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside. Flip them halfway through cooking for even roasting.

Prepare Balsamic Glaze: While the sprouts are roasting, combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a simmer over medium heat and reduce until thickened, stirring occasionally (about 5-7 minutes). Remove from heat and let cool slightly.

Combine: Once the Brussels sprouts are roasted, remove them from the oven and transfer them to a serving bowl. Drizzle the balsamic glaze over the roasted Brussels sprouts.

Finishing Touches: If using, sprinkle with grated Parmesan cheese and garnish with freshly chopped parsley for a pop of color and flavor.

Serve: Serve warm as an appetizer or side dish, and enjoy the combination of crunchy textures and tangy flavors!
