Roasted Garlic & Mushroom Flatbread

2 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

¾ cup warm water (about 110°F)

1 tablespoon olive oil

1 teaspoon salt

2 tablespoons minced fresh rosemary (or 1 tablespoon dried rosemary)

1 bulb of garlic

1 tablespoon butter

8 oz cremini or button mushrooms, sliced

¼ teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Extra olive oil (for drizzling)

Prepare the Dough: In a large bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it becomes frothy. Then, stir in the olive oil, salt, and rosemary. Gradually add the flour, mixing until a dough begins to form.

    Knead the Dough: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until it is smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

      Roast the Garlic: While the dough is rising, preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic, drizzle with a little olive oil, wrap in foil, and roast for about 30-35 minutes until soft. Allow it to cool, then squeeze the roasted garlic cloves out into a small bowl and mash them with a fork.

        Sauté the Mushrooms: In a skillet over medium heat, melt the butter. Add the sliced mushrooms and cook for about 5-7 minutes until they are browned and tender. If desired, sprinkle in red pepper flakes and cook for another minute. Remove from heat and set aside.

          Assemble the Flatbread: Once the dough has risen, preheat your oven to 450°F (230°C). Roll out the dough on a floured surface into a large rectangle or circle, about ¼ inch thick. Transfer it to a baking sheet lined with parchment paper.

            Spread the Toppings: Spread the mashed roasted garlic evenly over the dough. Evenly distribute the sautéed mushrooms on top. Sprinkle the mozzarella and Parmesan cheese over the mushrooms.

              Bake the Flatbread: Bake in the preheated oven for 12-15 minutes or until the edges are golden and the cheese is bubbling and slightly browned.

                Garnish and Serve: Remove from the oven and let it cool for a couple of minutes. Drizzle with a little extra olive oil, garnish with chopped parsley, and slice into pieces. Enjoy warm!
