Roasted Garlic & Spinach Ricotta Lasagna Rolls

12 lasagna noodles

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

5 cloves roasted garlic, mashed

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil, for garnish

Instructions
 

Prepare the Noodles: Boil a large pot of salted water. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, roasted garlic, chopped spinach, half of the mozzarella cheese, Parmesan cheese, egg, Italian seasoning, and add salt and pepper to taste. Mix until well combined.

      Assemble the Rolls: Preheat your oven to 375°F (190°C). Take one lasagna noodle and spread about 2-3 tablespoons of the ricotta mixture over it. Carefully roll the noodle from one end to the other and place it seam-side down in a lightly greased baking dish. Repeat this process with the remaining noodles.

        Add Sauce: Pour marinara sauce over the rolled noodles, ensuring they are fully covered. Sprinkle the remaining mozzarella cheese on top.

          Bake: Cover the dish with aluminum foil (shiny side down) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

            Garnish and Serve: Once baked, remove the lasagna rolls from the oven and let them sit for a few minutes. Garnish with fresh basil leaves before serving.
